salt and pepperto taste
1-2tbspextra virgin olive oil
1tbspbutter
1/3cupgreen onionschopped up (white and light green portions)
2cupsgreen beanslong-stem, petite (if frozen thaw and drain)
sea saltto taste
dash red pepper flakes
1/2cupfeta cheesecrumbled
Instructions
Season pork chops, on both sides, with salt and pepper, to taste. Cut small slits in the fat, if desired, to keep pork chops from buckling in the pan.
Once pan has cooled a bit, add butter to pan and use spatula to scrape up and remove any burnt bits from pan.
Add green onions and, stirring continuously, cook for 1-2 minutes until softened and fragrant.
Add green beans to the pan and spread in an even layer. Season with sea salt and red pepper flakes, to taste. Cook for 2-3 minutes, stirring the green beans into the green onions.
Using a spatula, move all of the green beans, to one side of the pan, to make room to add pork chops back in. Once chops are added to one side of the pan, scoop green beans on top of them, in order to make room for last pork chop, on other side of pan. Once all 3 pork chops, and their juices, have been added back to the pan, spread the green beans evenly and top with feta cheese.
Cut heat down to medium-low, cover pan with lid, and continue cooking for 8-10 minutes.
