Ingredients

  • 3 bone-in pork chops 1/2 inch thick
  • salt and pepper to taste
  • 1-2 tbsp extra virgin olive oil
  • 1 tbsp butter
  • 1/3 cup green onions chopped up (white and light green portions)
  • 2 cups green beans long-stem, petite (if frozen thaw and drain)
  • sea salt to taste
  • dash red pepper flakes
  • 1/2 cup feta cheese crumbled

Instructions

  • Season pork chops, on both sides, with salt and pepper, to taste. Cut small slits in the fat, if desired, to keep pork chops from buckling in the pan.
  • In a large sauté pan, over medium-high heat, heat the olive oil until it shimmers and then add the pork chops to the pan and sear for 5 minutes, without disturbing. Flip the chops over and sear the other side for an additional 5 minutes (if your stove cooks unevenly, you can turn your pan but do not rearrange the pork chops). During the last 2 minutes of cooking, turn the heat down to medium. Remove pork chops to a separate, clean, dish.
  • Once pan has cooled a bit, add butter to pan and use spatula to scrape up and remove any burnt bits from pan.
  • Add green onions and, stirring continuously, cook for 1-2 minutes until softened and fragrant.
  • Add green beans to the pan and spread in an even layer. Season with sea salt and red pepper flakes, to taste. Cook for 2-3 minutes, stirring the green beans into the green onions.
  • Using a spatula, move all of the green beans, to one side of the pan, to make room to add pork chops back in. Once chops are added to one side of the pan, scoop green beans on top of them, in order to make room for last pork chop, on other side of pan. Once all 3 pork chops, and their juices, have been added back to the pan, spread the green beans evenly and top with feta cheese.
  • Cut heat down to medium-low, cover pan with lid, and continue cooking for 8-10 minutes.
  • Plate and serve.
